Nieuw Amsterdam entered service in 2010, one of two ships in Holland America's Signature Class alongside Eurodam (2008). This isn't a case of one ship having much better dining: the two ships run nearly the identical dining foundation — the same included tier, the same three-restaurant shared specialty bench, and the same restricted-dining structure — and differ in exactly one place: how each ship implements Morimoto by Sea. Nieuw Amsterdam runs a full standalone Morimoto by Sea restaurant — Holland America's first dedicated at-sea restaurant from Chef Morimoto, and by HAL's own description exclusive to this ship; Eurodam instead pairs an à la carte Morimoto by Sea Sushi Bar with an event-style Morimoto by Sea Pop-Up. That single distinction is the entire story behind the 0.095-point gap — and Eurodam's Pop-Up narrows it meaningfully by taking the edge back in Special Experiences.

The Dining Room anchors the included tier as Nieuw Amsterdam's single main dining room, scored as one entity. Lido Market covers the buffet, and Dive-In and New York Pizza round out the free quick-service bench — New York Pizza here, not the combined New York Deli & Pizza format found on Pinnacle Class. Crow's Nest Café adds free coffee and pastries, with premium coffee drinks as the one paid add-on. Complimentary Afternoon/Classic High Tea runs once per cruise, and 24-hour Room Service covers a complimentary standard menu, with premium and late-night items carrying an extra charge.

The specialty bench pairs three restaurants shared with Eurodam — Pinnacle Grill (steakhouse), Canaletto (Italian), and Tamarind (Pan-Asian) — with Nieuw Amsterdam's own Morimoto format: the standalone Morimoto by Sea restaurant beside Tamarind on Deck 11, opened December 2023 at $55 per person plus 18 percent gratuity. That permanent restaurant is the specific reason Nieuw Amsterdam edges Eurodam in Specialty Dining and Quality Ceiling, even as Eurodam's event-style Pop-Up gives her the edge in Special Experiences.

Included Dining reads 7.3, carried by a seven-venue included tier: The Dining Room's complimentary full-service dinner, Lido Market, Dive-In, New York Pizza, Crow's Nest Café, once-per-cruise Afternoon/Classic High Tea, and 24-hour Room Service. It's identical on both Signature Class ships. Specialty Dining reads 8.3, the largest gap on this scorecard, driven by a four-restaurant bench: Pinnacle Grill, Canaletto, Tamarind, and the standalone Morimoto by Sea restaurant beside Tamarind on Deck 11 — Holland America's own current product page calls it exclusive to Nieuw Amsterdam among the entire fleet, a genuinely stronger permanent specialty product than Eurodam's sushi-bar-and-counter format.

Variety reads 7.4, identical on both ships — steakhouse, Italian, Pan-Asian, and a Japanese/sushi format all currently operate side by side on Nieuw Amsterdam and Eurodam alike. The format each ship uses for that fourth cuisine differs, but the breadth of cuisines on offer is the same, which is why Variety doesn't separate the two ships the way Specialty Dining and Quality Ceiling do. Quality Ceiling reads 8.4, the single largest gap on this scorecard — a real, current-product judgment, not an age or condition score. Nieuw Amsterdam's Morimoto by Sea is a genuine standalone restaurant, opened December 2023, and that permanent, full-format product sets a higher peak than Eurodam's counter-and-event pairing. This has nothing to do with Nieuw Amsterdam entering service in 2010 versus Eurodam in 2008 — ship age isn't a scoring input anywhere on this site, and the gap here traces entirely to the Morimoto implementation, not the hull.

Value reads 6.8, identical on both ships — a meaningful share of the best dining on either Signature Class ship sits behind a cover charge, an à la carte counter, or (here, on Nieuw Amsterdam) a $55-plus-gratuity restaurant, and Club Orange carries its own cost consideration on top. Casual & Quick Dining reads 7.3, carried by Dive-In, New York Pizza, and Crow's Nest Café working together as a compact but genuine quick-service bench — Signature Class runs one café rather than two, a roster difference from other Holland America classes, not a quality complaint.

Special Experiences reads 6.7, the one category where Nieuw Amsterdam trails Eurodam (7.6). Holland America's own current product page explicitly excludes Nieuw Amsterdam from the Morimoto by Sea Pop-Up program, because she already carries the standalone restaurant instead of the event format — so there's no separate hosted Morimoto event to credit here on top of it. Suite & Restricted Dining reads 5.8 — a real, current restricted-dining benefit, but materially weaker than Pinnacle Class's locked 8.7, since Club Orange here is priority Dining Room seating with an expanded menu, not a dedicated restaurant.

Crow's Nest Café runs a mixed-pricing model worth stating plainly: the base offering — coffee and pastries — is free, but premium coffee drinks carry an additional charge. It doesn't get a second roster row for that paid upcharge; it's a real, current detail folded into the same included-tier venue. Signature Class doesn't carry the Grand Dutch Café concept that appears on Pinnacle Class — Holland America's own venue page limits that second café to Koningsdam, Nieuw Statendam, and Rotterdam.

Complimentary Afternoon/Classic High Tea runs once per cruise, no charge. 24-hour Room Service covers a complimentary standard menu around the clock; premium and late-night items carry an additional charge — the full menu isn't free, and this guide doesn't present it as if it were.

The Seafood Boil is an occasional paid pop-up event at Lido Market — not on every sailing, and priced separately from the included buffet.

Holland America also lists a Gelato & Juice Bar concept fleet-wide, without ship-specific confirmation for Nieuw Amsterdam. This guide includes it here only in conservative, fleet-wide terms — verify what's actually operating on your specific sailing — and it doesn't move any category score in either direction.

Pinnacle Grill is the ship's steakhouse, a reservation-based, cover-charge restaurant. Canaletto serves Italian, also cover-charge.

Tamarind is the Pan-Asian specialty restaurant — confirmed present on Nieuw Amsterdam by Holland America's own specialty-dining FAQ, which names both Nieuw Amsterdam and Eurodam alongside the three Pinnacle Class ships. This guide doesn't hedge that point.

Morimoto by Sea is a full standalone restaurant beside Tamarind on Deck 11 — Holland America's first dedicated at-sea restaurant from Chef Morimoto, opened December 21, 2023, priced at $55 per person plus 18 percent gratuity, with à la carte sushi add-ons available. Holland America's own current product page describes it as exclusive to Nieuw Amsterdam among the entire fleet. Tamarind kept operating alongside it; this guide doesn't treat the new restaurant as having replaced Tamarind.

Nieuw Amsterdam does not carry the Morimoto by Sea Sushi Bar or the Morimoto by Sea Pop-Up — that two-part counter-and-event format belongs to sister ship Eurodam. This guide doesn't credit Nieuw Amsterdam with both a standalone restaurant and the Pop-Up event, since Holland America's own product page excludes her from the Pop-Up program precisely because she has the standalone restaurant instead.
