Pinnacle Grill is the ship's steakhouse, a reservation-based, cover-charge restaurant. Canaletto serves Italian, also cover-charge.

Tamarind is the Pan-Asian specialty restaurant — confirmed present on all three Pinnacle Class ships, Nieuw Statendam included. Holland America's own February 2025 announcement of the Morimoto by Sea Sushi Bar placed the new counter directly adjacent to the Tamarind dining area aboard Rotterdam by name, which is itself confirmation Tamarind operates there.
