Oosterdam entered service in 2003, one of four ships in Holland America's Vista Class alongside Zuiderdam (2002), Westerdam (2004), and Noordam (2006). She scores 7.3 on the Seabound Dining Score (weighted 7.260) — identical to all three sisters, category for category. This isn't a rounding coincidence: all four ships run the same 12-venue dining roster, the same two-restaurant specialty bench, the same Morimoto by Sea Pop-Up, the same Koningstafel special-experience dinner, and the same Club Orange restricted-dining structure. Oosterdam is a genuine dining peer of her sisters, not a rival — choose between the four based on itinerary, cabin, or sailing date, not dining quality.

The Dining Room anchors the included tier as Oosterdam's single main dining room, scored as one entity. Lido Market covers the buffet and also carries Holland America's Caputo Neapolitan-style pizza program — served inside the Lido Market on all four Vista Class ships rather than at a standalone pizza venue, a real structural difference from Holland America's Signature Class ships. Dive-In is the poolside grill, and Explorations Café covers coffee and pastries, with premium coffee drinks the one paid add-on. Complimentary Afternoon/Classic High Tea runs once per cruise, and 24-hour Room Service covers a complimentary standard menu, with premium items carrying an extra charge.

The permanent specialty bench is genuinely lean here — just Pinnacle Grill (steakhouse) and Canaletto (Italian), no standing Tamarind, no Rudi's Sel de Mer, no permanent Morimoto restaurant or sushi bar. That's the honest reason Specialty Dining reads a modest 6.9. But the class earns real dining interest back through event-format dining: the Morimoto by Sea Pop-Up, a guaranteed, recurring dinner available at least once per cruise, and Koningstafel, an exceptional six-course dinner event on qualifying longer sailings. Those two experiences are why Special Experiences reads a strong 8.1 and Quality Ceiling reads 8.0 — a thinner everyday bench, but a genuinely surprising ceiling when the ship reaches for it.

Included Dining reads 7.4, carried by The Dining Room's complimentary full-service dinner, Lido Market (with its in-house pizza program), Dive-In, Explorations Café, once-per-cruise High Tea, and the standard-menu tier of 24-hour Room Service. Specialty Dining reads 6.9, the scorecard's most honest number: just two standing specialty restaurants, Pinnacle Grill and Canaletto, with no permanent Tamarind, no Rudi's Sel de Mer, and no standalone Morimoto restaurant or sushi bar anywhere on Vista Class.

Variety reads 7.1 — two permanent cuisines plus the buffet and quick-service bench is a real, modest number, not padded by counting the Morimoto Pop-Up or Koningstafel twice. Quality Ceiling reads a strong 8.0 despite the thin everyday bench — a genuine, current-product judgment: when Oosterdam reaches for an occasion, the Morimoto by Sea Pop-Up and Koningstafel both deliver a ceiling most mass-market ships don't reach, even though neither runs nightly.

Value reads 7.2, a fair reflection of a lean specialty bench balanced against genuinely strong, reasonably priced event dining. Casual & Quick Dining reads 7.5, carried by Lido Market, Dive-In, Explorations Café, and Afternoon/Classic High Tea working together as a solid, if not sprawling, quick-service bench.

Special Experiences reads 8.1, set by two genuinely strong products working together: the Morimoto by Sea Pop-Up, guaranteed at least once per cruise, and Koningstafel, an exceptional six-course dinner reserved for qualifying longer sailings. This is intentionally a very different number from Specialty Dining's 6.9 — they describe different things, and this guide doesn't let one explain away the other. Suite & Restricted Dining reads 5.8, carried by Club Orange — priority seating in the regular Dining Room with an expanded menu, a meaningful benefit but not a dedicated restaurant, and well below Pinnacle Class's 8.7.

That paid upcharge doesn't get a second roster row; it's a real, current detail folded into the same included-tier venue.

The only genuinely paid casual items aboard are the premium coffee drinks at Explorations Café and the premium/late-night selections on 24-Hour Room Service — both already folded into their included-tier roster rows above, not scored as separate venues.

Taste of Tamarind is not a permanent restaurant on any Vista Class ship, including Oosterdam. Holland America's own current Tamarind page uses broad “open nightly” template language across several ships, but ship-level operational evidence — including firsthand accounts describing it as tied to Westerdam's Asia season, and Cruise Critic's own Noordam dining coverage calling it a “Taste of Tamarind Pop-Up” on “select nights” — contradicts that template language. This guide treats it as itinerary-specific, regional pop-up programming, not a scored venue, and doesn't create a score difference between Vista Class ships over it.

A Seafood Boil event occasionally appears as destination or itinerary programming — a casual, family-style seafood pop-up hosted in a designated section of Lido Market on select evenings, at an extra charge, not on every sailing. It's a real, if modest, current product, scored 7.0 like its counterpart on Holland America's Signature Class ships — identically across all four Vista Class ships, never a ship-to-ship differentiator on this page.

Pinnacle Grill is the ship's steakhouse, a reservation-based, cover-charge restaurant. Canaletto serves Italian, also cover-charge. Together, they're the entire standing specialty bench on Oosterdam — there is no permanent Tamarind, no Rudi's Sel de Mer, and no standalone Morimoto restaurant or sushi bar anywhere on Vista Class. This guide states that plainly rather than padding the bench with pop-up or itinerary-specific programming.
